Quinoa Squash Stir Fry

Ingredients Seeds of Change brand quinoa and brown rice
(1 single serving packet) 1 cup broccoli florets 1 small yellow squash, chopped 1/2 c chopped bell pepper 1/2 c chopped asparagus Directions lightly steam all chopped vegetables warm quinoa and brown rice on stovetop with 1/4 c water - approx. 3 minutes Combine rice and vegetables, stir together with a sauce made of 3 equal parts: 1 part (approx. 1/4 cup) sesame oil 1 part soy sauce 1 part honey (or slightly less honey) add more or less of either honey or soy depending on if you prefer sweet or salty. makes 1 serving |
