Black Eyed Pea Salsa
Eating black eyed peas has been considered good luck for at least 1500 years. Stories range from an ancient custom mentioned in the Talmud to tales from the Civil War period. Though they express the good fortune that comes from eating black eyed peas on New Year's, I can't think of a better holiday for lucky eats than St. Patrick's Day!
What You'll Need:
Ingredients:
1 can artichoke hearts
2 cans black eyed peas
1 large green bell pepper
1 small purple onion
8 oz. zesty italian dressing

Directions:
Drain and rinse black eyed peas
drain, rinse and dice the artichoke hearts
dice the bell pepper
dice the purple onion
drain, rinse and dice the artichoke hearts
dice the bell pepper
dice the purple onion
Combine all ingredients into one bowl.

Stir well and eat with tortilla chips, try the mixture as a filler inside pita bread along with hummus and romaine for a light and tasty sandwich, or spread it over tortilla chips and bake in the oven for black eyed pea nachos!
