Lemon Cashew "Cake" Balls
Ingredients
In a high powered blender or food processor, blend the following:
1 & 1/2 cup cashews,
1/2 cup rolled oats
2 Tablespoons honey
3 tsp. lemon juice & 1/2 tsp. lemon zest
1 & 1/2 cup cashews,

2 Tablespoons honey
3 tsp. lemon juice & 1/2 tsp. lemon zest
Directions
Melt 1 rounded Tablespoon coconut oil over low heat in a saucepan then add to above mixture and blend again.
Add extra oats if necessary and keep blending until the consistency is dough-like and will hold its shape.
Taste the mixture to see if it needs a little more lemon flavor.
Add more lemon juice if necessary.
Using a spatula, scrape mixture into a small bowl or freezer-safe container.
Refrigerate or freeze for 10 -20 minutes.
When mixture is chilled, use a melon baller, teaspoon or other small scoop and make 1 inch balls.
Optional Step: Roll balls in coconut to complete.
The coconut adds a great effect to mimic snowballs for a fun winter treat and helps the balls feel less gooey to the touch.
