Citrus Pecan Crunch
Ingredients 5-6 cups mixed greens 1 small avocado, cut into cubes 1/2 green apple, cubed 1/2 cup dried cranberries 1 cup mandarin oranges 1/2 cup chopped pecans garnish with green onion Dressing 2 Tbsp. fresh squeezed orange juice 1 tsp. Dijon mustard 2 Tbsp. Apple Cider Vinegar 2 Tbsp. honey 2 Tbsp. extra virgin olive oil |
Apple RomaineIngredients 2-3 cups chopped romaine lettuce 1/2 red apple cut into cubes 1/4 cup pecans, whole or chopped 2 Tbsp fresh grated parmesan Dressing 1 & 1/2 Tbsp olive oil 1 & 1/2 Tbsp balsamic vinegar 1 & 1/2 Tbsp pure maple syrup whisk the three ingredients together, drizzle over salad and serve. |
Strawberry SpinachIngredients 2 cups chopped romaine lettuce 2 cups chopped spinach 10-12 strawberries, sliced 1/2 cup chopped pecans 1/3 cup feta or grated parmesan (optional) Dressing 3 equal parts: 1 part olive oil, 1 part balsamic vinegar, 1 part pure maple syrup.
