Outrageous Vegetable Soup
3 cloves finely chopped garlic
1 large onion, chopped
2 carrots, chopped
2 quarts vegetable broth
3 yams (sweet potatoes)
4 to 5 cups fresh chopped spinach or kale
3 yellow or green zucchini squash
2 cups chopped broccoli (optional)
Salt and pepper (to taste)
1 (28 oz can) diced tomatoes
2 Tablespoons olive oil
In a deep pot, sauté garlic, onion, and carrots in oil for 3 to 5 min.
Add broth and bring liquid to a boil.
As you chop sweet potatoes into bite size pieces, add them carefully to broth. Cook potatoes approx. 20 min, stirring occasionally.
Chop and add zucchini squash 13 minutes after adding potatoes.
Chop and add broccoli florets at the same time as zucchini.
Season soup with salt and pepper to taste. Stir in tomatoes and heat through.
Stir in spinach or kale until it wilts into soup.
