Blackberry Crumble

Recipe
Filling
8 cups blackberries 2 & 1/2 Tablespoons fresh lemon juice 5 teaspoons organic cornstarch 5 Tablespoons organic agave nectar or organic coconut sugar* |
Topping
Combine the following: 1 cup organic coconut sugar* 3/4 cup organic oats 3/4 cup organic unbleached flour (I like Bob's Red Mill brand) or Arrowhead Mills brand Gluten free all-purpose baking mix* 1/8 teaspoon salt 1 teaspoon cinnamon 1/2 cup organic cold butter, cut in with forks or pastry blender |
Directions
Preheat oven to 375.
Combine filling ingredients in one bowl, topping ingredients in another.
Pour filling into a baking dish or individual ramekins and sprinkle a solid layer of topping over the fruit.
Bake until golden, 25-30 minutes.
Top each serving with fresh berries and mint leaves.
