Caramels ~ Decadent, Healthy, & Highly Addictive!
Raw Vegan, Gluten Free and Dairy Free
Ingredients
1/2 cup almonds
1/2 cup pecans (heaping 1/2 cup amounts- don’t be shy!)
10-12 medjool dates, pits removed.

Instructions
Process the ingredients together in a food processor (or vitamix blender) on high until they pull away from the sides of the container and become like a ball of dough as you can see below:
Blend further if you prefer a smoother, caramel like consistency with no trace of tiny nut pieces.
Place mixture between pieces of parchment or wax paper and roll mixture to about 1/4 inch thick.
Cut into small squares and leave those as-is, placed inside a mini-muffin baking liner (see photo below), or cut rectangles the size of almost 2 squares side by side. Then roll them into tootsie roll like shapes as seen on the far right. Place the tootsie roll like pieces onto strips of pre-cut wax paper and roll and twist the ends so they are sealed like candy wrappers. You can refrigerate until ready to serve or serve and eat immediately!
