Tortilla Soup
This soup begins with fantastically fresh ingredients and takes only a few minutes to make.
Recipe
Ingredients
3-4 cups hot water
2 roma tomatoes or 1 & 1/2 cups cherry or grape tomatoes
1 stalk celery
1 thin slice yellow onion
2-3 garlic cloves
1 cup chopped carrots
1 vegetable bouillon cube
1 tsp. taco seasoning
handful of tortilla chips
3-4 cups hot water

1 vegetable bouillon cube
1 tsp. taco seasoning
handful of tortilla chips
Directions
Using either a food processor or Vitamix Blender, blend tomatoes, celery, carrots, onion,
garlic, bouillon cube, taco seasoning, and hot water on high for 2 minutes.
Taste.
If necessary, season to taste by adding either hot pepper sauce or approx. 1/4 to 1/2 cup fresh organic salsa.
Blend again.
Add one half to one can of drained black beans and a handful of tortilla chips and
pulse slightly so that small chunks of beans and chips are visible.
Serve with fresh avocado slices and tortilla chips.
